I started this because I have had several people ask me for different dinner plans that I have made for my family. I usually make a 2 week menu and then go grocery shopping for the things I will need to make the meals. I will be posting daily menu’s and even some recipe’s. Some days I don’t intend to cook so I may stop and pick up a pizza or on payday we always go out to eat.

Tuna Melts

This is a recipe from the Pioneer Woman website. There are a couple of things that I changed. I didn’t use jalapeno’s and I didn’t use hard boiled eggs. Jalapeno’s would have been too spicy for our family and boiled eggs in tuna is just way gross to me! I would probably toast the muffins before putting the tuna on them and I would probably use sharp cheddar cheese instead of the Muenster that I used on these. But for the most part they were good. And this was my husband’s Father’s Day meal…He didn’t complain thankfully!

Killer Club Sandwich

 Killer Club Sandwich from Pioneer Woman. It truly was KILLER! My whole family loved it. I didn’t have the tomato pesto to add to it, so I just used mayonnaise. I did have the basil pesto to use so there was a bit of a kick to it. I think mayo would do just fine though. Mine had the avocado’s, Michael’s and Joy’s didn’t. I think the avocado’s make the sandwich! But that’s just me!

I haven’t been keeping up with this blog very well. Ack! I think though that I tend to cook the same thing over and over. But here are a few new things that I have tried along with cheese enchilada’s that I have made many times!

This is Sour Cream Noodle Bake from The Pioneer Woman. I thought it was yummy. I don’t think Michael and Joy were too thrilled with it though. Especially Joy as she is not a pasta fan.

This is Grilled Chicken and Roasted Red Pepper Panini’s from The Pioneer Woman. I don’t have a panini maker, but The Pioneer Woman suggested using a heavy pan set on the bread to squish it. It worked fine. The panini itself was okay. A bit rich for me. Joy didn’t eat this as she was sick that night so don’t know what she thought. Michael liked it.

turkey dinner and fruit salad

I was in the mood for a feast. I had been sick all week and Michael and Joy had been cooking their dinner. So I was ready for a good comfort food meal! Turkey, green bean casserole, dressing and sweet potatoes. Of course bread! We also had a fruit salad thanks to Joy’s friend Tori for all the cutting up! Apples, pineapple, grapefruit and oranges. It was very yummy.

February 03, 2011-Steak

Just as Michael put the steak on the grill the propane ran out. So I had to broil these steaks. They were okay, for broiled, but I prefer grilled. I made red potatoes mixed with peas in a medium white sauce. They were yummy. And then french bread to round it all out.

 Chicken Tortilla Soup from Pioneer Woman Cooks. This was soooo YUMMY! I loved it! I wish I would have had some pico and better avacado’s and some red onions. BUT, it was tasty tasty.

Vegetable Beef Soup

My vegetable soup never turns out the same. I don’t know why, but I guess it is because I never use a recipe. I just throw stuff in. Same with my chicken soup, chili and a few other things. Here is what I can remember I threw in for this batch of Vegetable beef soup:

stew meat and some sirloin steak cut up into pieces
2 cans of tomato sauce
1 can of chicken broth(I thought it was beef broth until it was opened and then I saw it was chicken broth so I threw it in anyway!)
3 beef bouillon cubes
2 raw potatoes cut up
1/2 bag of mixed frozen veggies
1 onion cut up
garlic salt
pepper

I browned the beef and then drained off the fat. Added the rest of the ingredients and then a bit of water. Cooked it on medium for about 3 hours.

I usually add carrots too but know that Joy doesn’t like them and the mixed frozen veggies had carrots in with them anyway. I think a frozen broccoli mix would have been good too. Or even some cabbage. But I had to do with what was in the cupboard and freezer and so this is what it ended up as. It was tasty…at least Michael liked it!
